Hot Gooey Caramel Pie
Dairy or Pareve Yield 2 pies, each 8-10 servings

In the years that I’ve been developing and writing recipes, I’ve made a number that have been really popular, some of which you can find in this book. None, however, have been as iconic and popular as my Hot Gooey Caramel Pie. When trying to figure out why this recipe took off so well, I thought about how different this dessert is. While other recipes are exciting takes on familiar ideas and flavors, this one was so unusual and different that I didn’t even know what I was making at first. It started with some ingredients in my pantry that I wanted to use up, and ended with a dessert that I could barely even name — but that everyone raved about.

This pie has been made in numerous countries all over the world, graced many special-occasion tables, and enhanced many meals. And over and over again, fans have raved, “It’s just SO good.”


  • 2 sticks (1 cup) butter or trans-fat-free margarine
  • 8 oz cream cheese or soy cream cheese
  • 1½ cups brown sugar
  • ¼ cup light corn syrup
  • 2 eggs
  • 1 teaspoon baking soda
  • 2 teaspoons vanilla extract
  • 1½ cups flour
  • 1 cup caramel chips
  • 2 ready-made graham cracker pie crusts
  • vanilla ice cream, for serving, optional
  • Caramel Sauce for serving, optional

  1. Heat oven to 350°F.
  2. In the bowl of an electric mixer, on medium speed, cream together butter and cream cheese until smooth. Add brown sugar and corn syrup; beat until smooth and creamy.
  3. Add eggs, baking soda, and vanilla, beating to combine after each addition.
  4. Reduce mixer speed to low; add flour. Beat until combined. Stir in caramel chips.
  5. Divide batter between pie crusts. Bake for 30-35 minutes, until the center is just set (it will still be jiggly).
  6. Serve warm with ice cream and caramel sauce (optional).
  7. Note As the name suggests, the pie is gooey— and it doesn’t cut into the neatest slices when warm. 

For a fancier presentation, make mini pies (see Variation) or serve it closer to room temperature, when it won’t be as gooey.

Variation For neater serving, bake in mini graham cracker crusts or ramekins for 22-24 minutes.
Plan Ahead This pie freezes well in an airtight container. Defrost and reheat before serving.



Pomegranate Cupcake
Pareve | Yield 1 dozen

Pomegranates are beautiful fruits, loaded with health benefits and delicious flavors, so it’s a shame they aren’t used more in baking! These easy-to-make and unusual cupcakes have a delicate fruity flavor and pretty pink appearance, thanks to the glaze.

  • ½ cup oil
  • ¾ cup sugar
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • ½ teaspoon baking soda
  • 1 teaspoon baking powder
  • 2 eggs
  • 1½ cups flour
  • ½ cup pomegranate juice

POMEGRANATE GLAZE
  • 1½ cups powdered sugar
  • 2-3 Tablespoons pomegranate juice, divided
  • Pomegranate seeds, for garnish, optional

  1. Preheat oven to 350°F. Line a standard (12-cup) cupcake pan with paper liners; set aside.
  2. In the bowl of an electric mixer, on medium speed, beat together oil and sugar until smooth and creamy.
  3. Add vanilla, salt, baking soda, baking powder, and eggs. Beat until combined.
  4. Alternately add half the flour and half the pomegranate juice, beating after each addition until incorporated.
  5. Spoon batter into prepared pan, filling each cup about three-quarters full.
  6. Bake for 16-18 minutes, until the tops are set. Remove from oven; cool completely before glazing.
  7. Prepare the glaze: In a small bowl, combine powdered sugar with 2 tablespoons pomegranate juice; mix until smooth. Gradually add an additional 1-3 teaspoons juice if needed to form a thick but spreadable glaze.
  8. Dip the tops of the cooled cupcakes into the glaze, allowing excess to drip back into the bowl. Garnish with pomegranate seeds, if desired.

Variation The flavors of pomegranate and chocolate go really well together, so you can frost these with Chocolate Fudge Frosting (page 188).

Plan Ahead These cupcakes freeze well in an airtight container. For best results, freeze them without the glaze and add it just before serving, but you can glaze them before freezing if necessary. Be sure to let the glaze set before you cover the cupcakes.



My Take on the Book
This a beautiful cookbook. The recipes range from cookies and cakes, to muffins and pastries, and candy. You will find many recipes for frosting and toppings. There are recipes for drinks and frozen treats. The color photographs which accompany the recipes will entice you to begin preparing one of the delectable treats immediately.

Miriam Pascal provides the reader with more than a recipe. She has a plan ahead section which will assist you in preparing a recipe prior to the occasion. She provides information about ingredients, substitutions, how to melt chocolate, and more. Each main topic has specific helpful tips for the recipes in that section. I am sure you will learn some new and valuable facts.l am also confident you will decide to add this cookbook to your kitchen library.

My Take on the Pie
Especially as we get closer to the holidays, but really anytime, pie just brightens the spirits of everyone in our home. I always come to find that having a good pie for a family dinner or a gathering with friends ties everything together. What I loved about Edwards was the breadth of pies available as well as how easy it was to make these pies. We tried the Pumpkin Creme as well as the Cookies & Creme pies and both were SO good. I could see us using these pies for whatever gathering we had and no one would know the difference. If you are looking for a great pie that is easy to make, look no further than in your local freezer aisle!

My Take on the Book
This was an amazing book that had so many delectable dishes. I was very impressed with the breadth and depth of the recipes in this book and the ice cream looks completely amazing. Now...it is winter right now so making ice cream does not sound too appealing, but summer will be coming soon and that means family ice cream making. This is the quintessential book with a ton of recipes. While some of these seem very out there, many I know my family would love to try. I was surprised to find some though with things like Sriracha sauce included in the recipe. The ice cream might be very good, though it just sounds different. The recipe for Michigan was a Michigan Salad ice cream which sounds a bit odd, but the ingredients seem to be interesting, including cherries (no lettuce thank goodness). All-in-all this was a great book, with a wide array of recipes, easy to follow instructions and much more!

My Take on the Book
This was an amazing book full of great recipes that will make your sweet tooth sing! The author has done a great job at bringing together a huge number of great recipes that are easy to follow and to prepare. So far my family favorite are the Carrot Pumpkin Bars, but there are so many to try and I know that I will find many more before I am through. The only thing that I wish was that the cookbook had more pictures of the items within the book itself. Other than that I was very pleased with everything I have found thus far and encourage all of you to take this home to your house to start making some great desserts too!

My Take on the Book
What was amazing with this cookbook was the array of desserts that the author shares with you and all you need to start is a cake mix and she takes you from there. I have tried out a number of the recipes and let me tell you, they are easy to make thanks to the step-by-step directions that the author provides and you can gauge your success through the amazing color images that are provided within the cookbook for some of the recipes. What would have made the book even stronger in my opinion was images for all of the recipes! Overall though, I was impressed and amazed at the number of recipes that were provided and the fact that all you needed to start was a cake mix (who would have thought).

My Take on these Products
First and foremost I have to say YUM! Both of these indulgent products taste more like a dessert you would make for yourself or your family, not something that you would simply purchase at the store! My kids absolutely loved both of these flavors and they taste just as mentioned above! Also the portion size is just enough to satisfy any sweet tooth that you may have, which is good in my case. Also, you will not break the bank in regards to cost or the number of calories you will add to your daily diet when eating these. All-in-all I have to say that these were SO good and they are definitely a product that I would highly recommend to all!

Kroger's Truly Awesome Cookies Are Tasty Buy a Bit Crunchy for my Taste



If you enjoy cookies that are like Chips Ahoy the you will love the new Kroger Truly Awesome Cookies. They are large and crunchy and have a ton of Chocolate Chips within them.

For me, I would say that the cookies themselves have great taste. Yet the only thing I did not like as much was how crunchy they were. You see, I am more of the type of person that enjoys cookies that are soft, such as the right out of the oven type.

Not that these cookies are bad in any sense as they are not, but for me they would not be my first pick due to my own taste.

I will say though that my daughters loved the cookies and thought that they were delicious. They asked for more and more and were continually amazed at how large they were.

The only other thing that I would have liked would have been a few more cookies within the package themselves as you only receive around 6 cookies in a pack. Now seeing that the cookies were quite large that was ok, but I always like my cookies to last me a few days at least.

My Take on the ProductI have to say that these ice cream sandwiches were delicious! I did not know what to expect, but I was pleasantly surprised to find that I did not taste a huge difference. One of the things that I really liked about these was that they had lower calories and less fat than regular ice cream sandwiches! I ended up trying the chocolate chip and was very happy with the overall taste as I know you will be as well! With all of this said, I highly recommend these for all!

My Take on the ProductsI have a sweet tooth! Yes, I admit it, I do have a sweet tooth and I like to quench it when I can. Thus, when I was asked to try out these new Duncan Hines Cake Mixes, I was quite excited. Thus, last weekend I was able to try these as we were having friends over and we needed to have some sweets to include in the get-together.

In making the mixes we made both cupcakes and a cake, and I was impressed at how easy the mixes were to make. I also was impressed with how well the mixes mixed together. The overall process to put together the mixes only took a few minutes and then it was only a matter of time until we were able to try out the masterpieces.

Once they were backed we placed the glaze over both of them, and again I found these to be easy to use and they easily were applied. I even had my girls helping along the way!

The proof they say though is in the pudding, or in this case, the cakes themselves. My first impression was how moist the cake was. Many times, I have come to find cakes from boxes to be a bit dry, but these were teeming with moisture. Not that they were sopping wet, but instead, the cake was perfect. Second though was the overall flavor. The flavor just exploded in your mouth (which was a good thing).

Overall, these cake mixes as a keeper! I know that I will be looking to get these again. Next time I also want to try the Carrot Cake mix, as I am a sucker when it comes to Carrot Cake!
