Hot Gooey Caramel Pie
Dairy or Pareve Yield 2 pies, each 8-10 servings

In the years that I’ve been developing and writing recipes, I’ve made a number that have been really popular, some of which you can find in this book. None, however, have been as iconic and popular as my Hot Gooey Caramel Pie. When trying to figure out why this recipe took off so well, I thought about how different this dessert is. While other recipes are exciting takes on familiar ideas and flavors, this one was so unusual and different that I didn’t even know what I was making at first. It started with some ingredients in my pantry that I wanted to use up, and ended with a dessert that I could barely even name — but that everyone raved about.

This pie has been made in numerous countries all over the world, graced many special-occasion tables, and enhanced many meals. And over and over again, fans have raved, “It’s just SO good.”

  • 2 sticks (1 cup) butter or trans-fat-free margarine
  • 8 oz cream cheese or soy cream cheese
  • 1½ cups brown sugar
  • ¼ cup light corn syrup
  • 2 eggs
  • 1 teaspoon baking soda
  • 2 teaspoons vanilla extract
  • 1½ cups flour
  • 1 cup caramel chips
  • 2 ready-made graham cracker pie crusts
  • vanilla ice cream, for serving, optional
  • Caramel Sauce for serving, optional

  1. Heat oven to 350°F.
  2. In the bowl of an electric mixer, on medium speed, cream together butter and cream cheese until smooth. Add brown sugar and corn syrup; beat until smooth and creamy.
  3. Add eggs, baking soda, and vanilla, beating to combine after each addition.
  4. Reduce mixer speed to low; add flour. Beat until combined. Stir in caramel chips.
  5. Divide batter between pie crusts. Bake for 30-35 minutes, until the center is just set (it will still be jiggly).
  6. Serve warm with ice cream and caramel sauce (optional).
  7. Note As the name suggests, the pie is gooey— and it doesn’t cut into the neatest slices when warm.

For a fancier presentation, make mini pies (see Variation) or serve it closer to room temperature, when it won’t be as gooey.

Variation For neater serving, bake in mini graham cracker crusts or ramekins for 22-24 minutes.
Plan Ahead This pie freezes well in an airtight container. Defrost and reheat before serving.

Pomegranate Cupcake
Pareve | Yield 1 dozen

Pomegranates are beautiful fruits, loaded with health benefits and delicious flavors, so it’s a shame they aren’t used more in baking! These easy-to-make and unusual cupcakes have a delicate fruity flavor and pretty pink appearance, thanks to the glaze.

  • ½ cup oil
  • ¾ cup sugar
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • ½ teaspoon baking soda
  • 1 teaspoon baking powder
  • 2 eggs
  • 1½ cups flour
  • ½ cup pomegranate juice

POMEGRANATE GLAZE
  • 1½ cups powdered sugar
  • 2-3 Tablespoons pomegranate juice, divided
  • Pomegranate seeds, for garnish, optional

  1. Preheat oven to 350°F. Line a standard (12-cup) cupcake pan with paper liners; set aside.
  2. In the bowl of an electric mixer, on medium speed, beat together oil and sugar until smooth and creamy.
  3. Add vanilla, salt, baking soda, baking powder, and eggs. Beat until combined.
  4. Alternately add half the flour and half the pomegranate juice, beating after each addition until incorporated.
  5. Spoon batter into prepared pan, filling each cup about three-quarters full.
  6. Bake for 16-18 minutes, until the tops are set. Remove from oven; cool completely before glazing.
  7. Prepare the glaze: In a small bowl, combine powdered sugar with 2 tablespoons pomegranate juice; mix until smooth. Gradually add an additional 1-3 teaspoons juice if needed to form a thick but spreadable glaze.
  8. Dip the tops of the cooled cupcakes into the glaze, allowing excess to drip back into the bowl. Garnish with pomegranate seeds, if desired.

Variation The flavors of pomegranate and chocolate go really well together, so you can frost these with Chocolate Fudge Frosting (page 188).

Plan Ahead These cupcakes freeze well in an airtight container. For best results, freeze them without the glaze and add it just before serving, but you can glaze them before freezing if necessary. Be sure to let the glaze set before you cover the cupcakes.

My Take on the Book
This a beautiful cookbook. The recipes range from cookies and cakes, to muffins and pastries, and candy. You will find many recipes for frosting and toppings. There are recipes for drinks and frozen treats. The color photographs which accompany the recipes will entice you to begin preparing one of the delectable treats immediately.

Miriam Pascal provides the reader with more than a recipe. She has a plan ahead section which will assist you in preparing a recipe prior to the occasion. She provides information about ingredients, substitutions, how to melt chocolate, and more. Each main topic has specific helpful tips for the recipes in that section. I am sure you will learn some new and valuable facts.l am also confident you will decide to add this cookbook to your kitchen library.

Book Review - Ms. American Pie

Ms. American Pie: Buttery Good Pie Recipes and Bold Tales from the American Gothic House
 photo disclaimer2_zps8af35ac1.jpg

About the Book
Author and baker Beth M. Howard knows pies but she’s not your typical pie maker. Since taking up the rolling pin she’s made pies at California's Malibu Kitchen for celebrities including Barbra Streisand (lemon meringue), Dick Van Dyke (strawberry rhubarb), and Steven Spielberg (coconut cream). She loaded 240 pies into an RV and drove them from Iowa to Newtown, CT. in December 2012–knowing full-well the healing power of pie. She currently calls the famous American Gothic house in Eldon, Iowa home and runs the hugely popular Pitchfork Pie Stand out of its parlor every summer. Beth M. Howard is far from your typical pie maker so understandably her new book is far from your typical cookbook.

With full-color photos throughout, MS. AMERICAN PIE [Race Point Publishing, April 2014, $28.00 US/$30.00 CAN] features 80 of Beth's coveted pie recipes along with some of her own true tales of taking her pies from coast to gleaming coast and the lessons she learned along the way. Inside readers will find recipe after mouthwatering pie recipe in chapters such as:

  • Pies to Question Authority
  • Pies to Heal
  • Pies to Seduce
  • Pies to Keep an Open Mind
  • Pies to Compete in the Iowa State Fair

In addition Beth shares her philosophy of pie ideology–pie builds confidence, pie builds community, pie connects people–and so on. She shares her pie principles including the irrefutable truth: if you can get past your fear of pie dough you can get past bigger, scarier fears. And she busts pie myths – turns out you don’t need to refrigerate your crust before rolling it and using your hands to mix the dough will not make it tough.

Readers will soon discover that MS. AMERICAN PIE is so much more than a cookbook, it’s a reminder that through it all there is happiness around every corner and if you’re looking for that extra nudge to move forward, that springboard to launch you to the next level – it’s always best to start with pie.

My Take on the Book
This was a great book that will make your mouth water. The book is filled with amazing pies that will make you want to start baking. There were a ton of pies that I would have never thought of. One of the ones that I was really intrigued by was the Avocado pie. I tried to make this and it actually was really good and had a taste that was similar to a Key Lime pie. CThere were so many others that I was completely in awe of and ones that I know that I will be making soon for my family and friends, especially with Easter coming up. This is an amazing book that you will want for your own family!

Light, fluffy, billowy puffs of sticky, gooey goodness, these gourmet marshmallows are made the old fashioned way – handmade in a two day process of whipping to a heavenly lightness, and flavored with the absolute highest quality all-natural ingredients. From whipping at a precise time and temperature to cutting them by hand, there are no short cuts taken to make these gourmet Puffs.

Plush Puffs are good enough to eat straight out of the package, and even more delicious when melted in hot drinks. That’s why they created the MugToppers. These marshmallows are gluten free, fat free and contain no high fructose corn syrup.

These puffs are naturally low in fat and have no high fructose corn syrup.
  • Luscious Lemony Meringue – These all-natural lemony treats have the perfect amount of tartness. Fat free, gluten free and containing no high fructose corn syrup, these Puffs are delicious dipped into a hot cup of tea.
  • Chocolate Chipetta – These marshmallows start with an intense cocoa flavor and are then topped with micro-mini chocolate chips for that heavenly yet unexpected crunch. These puffs are fat free, gluten free, and contain no high fructose corn syrup.
  • Caramel Swirl – Plush Puffs’ classic Vanilla Bean marshmallow is topped with creamy bands of rich caramel. This marshmallow is sublime when roasted, dipped into a delicious dark chocolate fondue, and perfect in a steaming cup of cappuccino. These puffs are gluten free, low fat and 100% natural.
  • Peppi-Mint – These minty, refreshing Plush Puffs are bursting with natural peppermint flavor and are a perfect way to spice up an ordinary cup of hot cocoa or coffee into a special treat! These Puffs are fat-free, gluten free and contain no high fructose corn syrup.

  • Sydney’s Cinnamon – Whipped with the highest quality ground cinnamon and almond extract, the aromatic smell and flavor of these marshmallows being toasted is exceedingly pleasing! These Puffs are low in fat and gluten free. (This flavor is only available in bulk sheets.)
  • Mochacinno – A tasty treat, the flavors of chocolate and cappuccino mixed in our light & fluffy marshmallow are delicious on their own or in a warm cup of coffee!
  • Pumpkin Pie – A seasonal flavor perfect for Fall, these babies are like soft luscious bites of a homemade pumpkin pie. Float one on a creamy latte, toast over some yams or come up with your own Pumpkin Plush Puffs recipe! And like all Plush Puffs, they’re equally yummy right our of the package.
  • Gingerbread Spice – A seasonal holiday flavor, our Gingerbread Spice Plush Puffs Gourmet Marshmallows come out just in time for hot cocoa and cozy morning mugs of coffee. They taste like the holidays epitomized. When toasted up, the nutmeg stands out and the real, all-natural ginger warms your soul.

Limited Edition flavors like Maple Bacon and Vanilla Granola Chip are often available throughout the year as well.

My Take on These
I had the opportunity to try out three of these flavors out and they were delicious. I was impressed with how tasty they were even without as much of the fructose. The I loved all of the different varieties that were available. The favorite one that I tried was the Caramel Swirl, but to be honest all three of the varieties were great and I would definitely try other varieties as well. As you are looking at gifts or simply sweet treats to share with your family for Easter, or for any other occasion, you should definitely put these on the top of your list!

My Take on the Chocolate
I am, and have been, a lover of chocolate! I love to trying new varieties of chocolate that I find more new companies that may be from other countries to give me a sense of the exotic in regards to the experience that I'm having with the chocolate that I am eating. What I loved about this product was how smooth and rich the chocolate was. While this is a white chocolate product, it is so flavorful, smooth and slightly sweet. The hazelnuts added a nice variety to the flavor itself, but they were not overpowering as even my wife, who is not big on knots in her chocolate, mentioned that she really enjoyed the flavor and texture of this as well. All-in-all I HAVE to say that my wife and I as well as my kids were quite impressed with this, and if you two are a person who loves chocolate, you should definitely try this for yourself.

My Take on the Candy
Talk about a blast form the past, I used to love these flavors when I was in Middle and High School and now I can share them with my own kids! I loved that they brought these flavor combinations back as they are definitely ones that should be on the shelves and in my books they should keep them as well. In letting my kids try them, they voted the Cherri and Bubb as tops in their book! All-in-All, if you have not tried these flavor combinations, you definitely should!

Goody Good Stuff Offers Healthy Sweets For All!

About the Candy

The most frightening trick of all this Halloween may be the candy landing in our children’s treat baskets. Extensive research from the United States, Britain and Australia shows that artificial dyes and other chemicals found in candy can cause hyperactive behavior in children, and not just those diagnosed with attention deficit hyperactivity disorder (ADHD). To the great news: parents can easily protect their kids—and themselves—from creepy chemicals this Halloween season thanks to all-natural, artificial-free gummy candy from UK–based Goody Good Stuff (www.goodygoodstuff.com)

Now sold in stores across the U.S. and available in special Halloween packaging and colors (retailing for as low as $1.99 per bag), Goody Good Stuff’s delicious line of sweets is made with top-quality ingredients.  These tasty treats are carefully produced using a highly innovative technology that eliminates the use of the meat-derived gelatin and nasty artificial additives found in most gummy candies.

Goody Good Stuff candies fuse pure fruit juices with plant extracts, such as nettle, spinach, elderberry and black currant, creating a gummy as rich in color as it is in flavor. Naturally free of meat, dairy, gluten and soy, this treat makes a smart and safe candy alternative for kids (and adults) of all ages.

In fact, Goody Good Stuff candies have been hailed by Oprah.com as one of the most “homemade tasting candies” available in the U.S and a top choice for Halloween in 2010.   As one happy customer, JL states: “A triumph and a delight!   These vegetarian gummies are sheer masterpieces of confectionary.”

Goody Good Stuff’s freshly flavored candies come in eight delicious varieties, including four vegetarian options (Strawberry & Cream, Cheery Cherries, Tropical Fruit and Koala Gummy Bears) and four delectable vegan varieties (Cola Breeze, Summer Peaches, Sour Mix & Match and Sour Fruit Salad).
By the time Goody Good Stuff turns one this August, their delicious candies will be available in over 1,000 outlets across the US.  Goody Good Stuff’s team of young and energetic confectionary professionals are already brewing up new concoctions for release in early 2012.

Families looking for a smart and tasty Halloween treat alternative will find Goody Good Stuff’s mouthwatering candies in national retail stores such as Giant, Stop ‘n Shop, Bed, Bath & Beyond as well as on Amazon.com for as low as $1.99 per bag.

For those looking for a new costume idea this Halloween – why not dress up as Goody Good Stuff’s cute and loveable mascot, Kobi the Koala!  Kobi the Koala strikes a pose on each of their beautiful bags of candy and further illustrates Goody Good Stuff’s commitment to a clean, carefree and animal-friendly product.
This Halloween season, satisfy your sweet tooth with Goody Good Stuff’s superior flavors and textures without the worry of artificial colors, dairy, allergens and other harmful ingredients. Thanks to Goody Good Stuff, children (and adults) can savor clean and delicious Halloween candy—and feeling Goody Good about it!

For company history and information, please visit www.goodygoodstuff.com

My Take on the Candy
As a parent we are always looking for new ways to limit sugar intake with our kids (even though they always love eating it). When it comes to Halloween, you know that sugar is simply everywhere. Not that I am against sweets, as I have a sweet tooth myself. The thing that you don't know about a lot of candy is what companies place in the candy itself. What I liked about this candy is that it is healthy and you will not know that this candy is made without any artificial colors, dairy, allergens and other harmful ingredients. Also, the candy tastes great! The girls tried this and I did not tell them that it was anything different than regular candy, and they thought they tasted great! All-in-all, I would highly recommend this to all!

My Take on the ProductsI have a sweet tooth! Yes, I admit it, I do have a sweet tooth and I like to quench it when I can. Thus, when I was asked to try out these new Duncan Hines Cake Mixes, I was quite excited. Thus, last weekend I was able to try these as we were having friends over and we needed to have some sweets to include in the get-together.

In making the mixes we made both cupcakes and a cake, and I was impressed at how easy the mixes were to make. I also was impressed with how well the mixes mixed together. The overall process to put together the mixes only took a few minutes and then it was only a matter of time until we were able to try out the masterpieces.

Once they were backed we placed the glaze over both of them, and again I found these to be easy to use and they easily were applied. I even had my girls helping along the way!

The proof they say though is in the pudding, or in this case, the cakes themselves. My first impression was how moist the cake was. Many times, I have come to find cakes from boxes to be a bit dry, but these were teeming with moisture. Not that they were sopping wet, but instead, the cake was perfect. Second though was the overall flavor. The flavor just exploded in your mouth (which was a good thing).

Overall, these cake mixes as a keeper! I know that I will be looking to get these again. Next time I also want to try the Carrot Cake mix, as I am a sucker when it comes to Carrot Cake!

This post was written for Family Review Network & Duncan Hines who provided the complimentary product for review in exchange for my honest opinions
