Book Review - 1,001 Best Grilling Recipes: Delicious, Easy-to-Make Recipes from Around the World

1,001 Best Grilling Recipes: Delicious, Easy-to-Make Recipes from Around the World

 photo disclaimer_zpsd3x74ej2.jpg

About the Book
1,001 Best Grilling Recipes is the definitive book on grilling everything from appetizers to desserts. This second edition of the popular cookbook is enlarged and beautifully repackaged, giving Grilling a sleek new design and a broader width that allows the book to stay open to your chosen page for maximum convenience.

Author Rick Browne is known as one of the country's foremost authorities on grilling. The creator and host of the PBS TV series Barbecue America, Browne is also the author of twelve cookbooks, most of which deal with barbecue and grilling. In this volume, he's created an encyclopedic collection of recipes drawn from cuisines around the world, with a particular focus on North American and Asian traditions.

Browne begins with a brief primer on basic grilling techniques, but the real substance of this book is the dazzling array of recipes. You'll find dishes everyone can enjoy, including standard grill fare like beef and chicken as well as the more unusual shellfish and wild game. There are plenty of vegetarian options too, and a section for sauces, marinades, and rubs.

Never before have this many great grilling recipes been collected into one tome. If you love to grill—or know someone else who does—this is a must-have resource. It's the only grilling recipe book you'll ever need.

My Take on the Book
Talk about complete! This recipe book has so much to offer. It is simply huge and has a little bit of everything within it. The recipes are easy to follow and the instructions are clear. Best of all is the breadth and depth within the book itself. I am really impressed by what I am seeing here and am really looking forward to testing out so many of these recipes over the summer.

Mangrate = Great Flavor & Optimal Grilling Experience!

Disclosure: I got this product as part of an advertorial.
 photo disclaimer2_zps8af35ac1.jpg

Mangrates are American made grilling grates designed to sit on top of any existing grill and give the griller the steakhouse quality food they want. ManGrate's cast-iron design utilizes radiant heat—instead of convection heat or "hot air"—searing in the juices but allowing food to cook evenly. The smoke rails are the angled ledges on each bar of the ManGrate. These ledges are designed to trap and retain oils and fats released during grilling, and it's these juices that aid in the natural smoking process giving meats a rich, barbecued flavor. They also serve to reduce flare ups.

My Take on the Mangrate
I love grilling! I love getting amazing flavor in the meats that I cook, however, sometimes you don't get what you want no matter what you try. I had heard about Mangrates online and was intrigued by everything that I was reading as it sounded too good to be true. I was able to try out two of the grates on my grill and followed the instructions to prepare the grates (placing them for about 20 minutes on the grill itself at about 550 degrees). Once done I threw some burgers on and was amazed to see how well the grates collected the juices of the meats and turned those juices into some of the things that made the meat cook evenly and grill perfectly. Also, if you love perfect grill marks on your meat, you will not be disappointed by using this product at all! I also have to say that the flavor that you get with these far surpasses what I have been able to achieve on the grill itself. I also love how heavy duty these grates are. Each of the grates weighs about 8 pounds, and is made of cast iron so you will not be needing to replace these, probably ever! I am VERY impressed thus far and will be cooking on them again tonight, and for many nights to come!

I received one or more of the products mentioned above for free using Tomoson.com. Regardless, I only recommend products or services I use personally and believe will be good for my readers.

Make Grilling Easy For Dad This Fathers Day With The Porter!

Porter: BBQ prep containers + serving dish
 photo disclaimer2_zps8af35ac1.jpg

One-trip grilling

This summer helper is smokin’ hot. Porter is a multi-purpose BBQ tray that eliminates extra trips between your kitchen and grill. Containers with lids keep raw food safely separated, while a serving platter and condiment caddy hold everything a grill chef needs at hand. It'll ensure your next BBQ is as perfectly timed as your meat.

Porter: BBQ prep containers + serving dish

My Take on the Porter
I don’t know how many of you have ever had this happen to you. You are grilling something for dinner. You place your meat on one plate to carry out to the grill. Once the meat is on, you have to then take that plate back in, place it in the dishwasher and get another plate for the finished meat. This does not even take into account if you are grilling vegetables or other items. What you end up with is a ton of plates that you have to wash because you cannot let the raw meat touch the raw vegetables and vice-versa.

Porter: BBQ prep containers + serving dish

Enter the Porter. This innovative product save you so much effort to get your items to the grill to be cooked and then in the lower tray allows you to bring the cooked items back inside. Thus, all of your items will get to the grill and back in far fewer plates and everything is enclosed in one product instead of having many plates that now need to be washed and far more time and effort extended.

Porter: BBQ prep containers + serving dish

I came to find that the product itself was well made and worked as was claimed. I found that it saved me a ton of time and effort in the end and I was very impressed with the overall design and usability of the product itself.

I highly recommend this to all, especially those of you that enjoy grilling!

Book Review - Done.: A Cook's Guide to Knowing When Food Is Perfectly Cooked

Done.: A Cook's Guide to Knowing When Food Is Perfectly Cooked
 photo disclaimer2_zps8af35ac1.jpg

About the Book
Done. answers the age-old question that stumps all cooks: "Is it ready yet?" In this infinitely handy kitchen guide, foremost cooking authority James Peterson gives at-aglance answers for more than 85 of the most vexing-to-cook foods, from sauces, vegetables, fish, and meats to sweets. Detailed descriptions of smell, sound, look, and texture provide a quick reference, while more than 500 color photographs clearly capture each key stage of doneness. With distilled explanations of the 10 basic cooking methods for context, Done. is the solution to thermometer dependence. It's an instant classic for cooks of all skill levels.

My Take on the Book
James Peterson's book covers everything . The contents page listed various cooking methods, sauces and egg dishes, vegetables and rice, beans and seafood, poultry and beef, lamb and pork, and sweets and breads. James assists the reader in understanding what doneness looks like, feels like, smells like, etc. He encourages the cook to use all five senses when cooking.

I felt the photographs included helped me in understanding the concept of many of the cooking demonstrations in this book. For example the entry for making "clarified butter" listed not only the steps but also included photographs for each of the steps through the process of making "clarified butter".

If you are not sure how to make a pot roast, check out pages 174-176. Once again the directions were clearly written and easy to follow. There were multiple photographs to assist the reader throughout the cooking of the pot roast. This cook book is for anyone who wants specific information concerning when a food is done cooking or baking. I learned new information and techniques. The book would become an excellent resource.

Book Review - Grill to Perfection

Grill to Perfection
 photo disclaimer2_zps8af35ac1.jpg

About the Book
The art of grilling is as old as fire and more popular than ever. Whether it’s the convenience of a gas grill or the traditionalism and taste of charcoal, the right recipes paired with the right techniques can create delicious and unforgettable meals.

As home grillers look for new backyard culinary adventures, a new book takes the art of grilling to the next level. GRILL TO PERFECTION [Page Street Publishing, April 2014, $21.99 US], by veteran barbecue champions Andy Husbands and Chris Hart, break the mold by offering a wide range of incredible new recipes for the grill along with tips, techniques and tools of the trade that will make anything cooked on a grill perfection.

“Grilling to us is more than a way to cook, it’s a way of life,” the authors state. “This book is about grilling and for us, as in all our books, technique is the key. Because temperatures can vary dramatically in a grill, it’s important to develop a feel for the fire rather than rigidly follow recipes. Once you master the temperatures and timing on a grill, the sky’s the limit.”

The authors cover topics such as: Our Go-To Cooking Methods, How to Build a Two-Zone Fire in a Gas Grill, and The Tools We Always Have When We Grill.

Andy and Chris, winners of multiple national barbecue championships including the Jack Daniel's Invitational, take influences from lesser-known but delicious styles from American and international dishes. Recipes in the book feature fish, pork, lamb, poultry, beef, veggies, drinks and desserts, perfect for any occasion and include:

  • Tamari-Glazed Steak with Sweet-and-Spicy Rice
  • Curried Chicken Tenderloins with Coconut and Papaya Salad
  • Seared Greens with Grilled Chicken Livers and Blue Cheese

  • Lemon and Fresh Herb Grill-Roasted Leg of Lamb
  • Wood-Roasted Pork Tenderloin with Grilled Bruschetta and Pork Butter Spread
  • Grill-Roasted Ginger Clams with Sake and Scallions
  • Grilled Trout Stuffed with Fresh Herb Salad
  • Eric’s Molasses-Chipotle Glazed Sweet Potatoes

My Take on the Book
I am awaiting warmer weather to come and part of this is because I am ready to be able to grill again and this book is going to help. The book is full of great recipes, tricks and tips about how to best make some amazing grilled items. There were things in this book that I would not have expected like the Pumpkin Bread in a can as was referenced above! I loved how the book was organized and how easy to follow the instructions were. Most of the recipes seemed like they would not be too time intensive so I think for me they will be on my "to try" list for this year! If you are looking for a complete grilling resource, look here!

My Take on the Product
I love grilling and I love trying new things/tools, so I was excited to try this out to see whether it lived up to the hype that was stated about it. One reason for this is that for me, I tend to use steel wool after I grill, and while it gets the grill clean, it always leaves my hands filthy and greasy, this seemed up front like it solve this problem for me.

In trying the device, I found it easy to fill and once I was done cooking, I was able to use this while the grill was still hot. In turning on the stream of water I noticed  the steam with the device and it did seem to be breaking down the things on the grill. I noticed though that while it worked well at first, if your grill is turned off, you have to move fast as it seems to work best when it is at about 400 degrees or so, providing enough heat so the steam can occur.
This being said the device does work well and I found that if the grill is too hot for your hand you can also use a grill mitt to safeguard your hand while you clean your grill.

One thing that I did like was that the heads from the device were removable and you could place them in the dishwasher to get them 100% clean.

All-in-all I was impressed and will be continuing to use this in the future!

Book Review - The Complete Idiot's Guide to Smoking Foods

The Five Meat Smoking Commandments

Chef Ted Reader’s brings on the smoke and the flavor with these tasty tidbits Meat smoking is becoming very popular in local restaurants this season, and Chef Ted Reader has come up with these five easy tips from his new book, The Complete Idiot’s Guide to Smoking Foods, to help you get rolling the first time you fire up your smoker, and every time to follow.

  1. Be prepared: As we have always been taught, proper and thorough preparation is very important, especially to be successful in meat smoking. Assuming you already have a smoker, the first step would be the food preparation. Your final result out of the smoker will only be as good as the ingredients you put into it, and it is important to always buy good-quality ingredients – or the best you can afford. Before bringing your food out to the smoker, a fire will need to be created to prepare the smoke. You’ll need to prepare your smoker ahead of time, keeping in mind how long your meat will take to smoke, and what fuel sources you will need during the process.
  2. Be patient:Timing is crucial, that’s all there is to it. Waiting for foods to smoke, and tending the fire to maintain a consistent temperature can be tedious, but are important to successful smoking. If you have the perseverance to wait it out, you’ll discover the art of creating truly delicious foods.
  3. No peeking: Do you remember baking cookies, and being yelled at by your mother to stop opening the oven? It’s easier said than done, but meat smoking follows the same guidelines. A seemingly-harmless 30 second peek could add approximately 20 minutes to your smoking time. The less you peek, the sooner you eat!
  4. Practice makes perfect: “Every time you smoke, it’s a chance to improve on what you did last time and create new flavors that will make you and your guests deliciously happy” exclaims Ted Reader, in his new book The Complete Idiot’s Guide to Smoking Foods. Perhaps try challenging yourself by timing how long it takes for charcoal to reach its perfect white-hot temperature. Keeping track of what you have done will only help make you a better smoker, so try keeping notes and set goals to improve each time you cook.
  5. Have fun! It takes the right combination of ingredients, time and patience to infuse wonderfully smoky flavors. A job well done is only measured by how tasty the food is and how much fun you had while preparing your meal. “The sweet smell of smoke, tending the fire, and smoking food to delicious perfection—that’s what it’s all about!” says Ted.
Loaded with over 60 mouthwatering recipes, The Complete Idiot’s Guide to Smoking Foods has everything you need to know for preparing tender meats, sensational side dishes, and other delicious foods to become a master smoker.

About Ted Reader
Ted Reader is an award-winning chef and food entertainer, who’s parlayed his passion for food into a culinary tour de force that includes more than a dozen cookbooks, shelves of food products, live culinary performances, TV and radio cooking shows and appearances as well as culinary demonstrations, a catering company and teaching. Known for his pyrotechnic charm and fearless culinary spirit, it’s no surprise that GQ magazine labeled him the “crazy Canuck barbecue kingpin.” The dude just loves to cook! Ted’s quest for creating “real food for real people” has seen this high-profile culinary barbecue guru demonstrate his flair for grilling in all venues from swanky ball rooms to the Pacific Ocean to a downtown Toronto parking lot. Today, he owns more than 100 barbecues, grills and smokers in all shapes and sizes and never goes anywhere without one in the back of his truck.

My Take on the Book
If you have ever thought about smoking foods, or have had your mouth watering smelling the smoking foods that your neighbor has been making, this is the book for you. It brings you step-by-step on your way toward becoming a master of smoking different kinds of foods. What I loved about this book was how easy it was to follow as it was through the easy steps that anyone can find themselves smoking foods and making them taste just amazing. The series of books that this is in is great for making the complex so much simpler, and I for one have to say thank you for that to not only the author of this book, but also to the founder of the series!

Now, just in time for Father’s Day, dads across America can also be gourmet chefs with Fischer & Wieser’s line of savory sauces. By trading in the ketchup and mustard in favor of fresh, exciting flavors, dads will be able to show off their culinary expertise instead of the usual tie or sweater vest. The following Fischer & Wieser sauces are gluten-free, preservative-free and ready to use right out of the jar!

The Original Roasted Raspberry Chipotle Sauce® is a smoky, sweet combination of luscious red raspberries and hot chipotle peppers. Perfect as a marinade for steak, chicken, or beef, this sauce is sure to keep guests talking. Use The Original Roasted Raspberry Chipotle Sauce® as a dip for chicken and vegetable skewers, or mix with olive oil for a delectable salad dressing that compliments any smoky grilling item perfectly.

Texas Pit BBQ Sauce gives a kick to the original smoky BBQ sauce, and is perfect for pouring generously over ribs, chicken or burgers. Fischer and Wieser perfected a sauce that pays homage to classic smokehouses, while introducing a unique chile--the Pasilla de Oaxaca--that is medium-hot and is known for its rich flavor.

Sweet and Savory Onion Glaze is another one of Fischer and Wieser’s sweet heat combinations, mixing onions and just the right amount of jalapeno pepper to create a versatile glaze for grilled meats and seafood. This trifecta of flavors is only a glimpse into the world of Fischer and Wieser, which has over 100 preservative-free, gluten-free, flavor-packed products to choose from; each one guaranteed to make a BBQ or a regular week-night meal a culinary adventure. Spice up Father’s Day this year with Fischer and Wieser, and give a deserving father a present that everyone in the family can enjoy!

My Take on the Sauce
Do you like to grill? If you have followed me in the past, you know that I do and I do enjoy trying new sauces and ways to make flavor explode from the meat that I am cooking. Recently I was provided with the opportunity to try the sauces listed above and recently I tried out the Fischer and Wieser’s Roasted Raspberry Chipotle Sauce.

When I heard about this sauce I was a bit intrigued. I say this because I love things that spicen up any dish and I also like items that are “hot” in flavor as well.

The company also speaks about the fact that they aim to provide their customers with unique foods that are hand crafted for each customer. I liked this message as I am all about the idea of customer first companies, and this company definitely seems to work in this regard.

Overall this sauce was amazing and was something that I would highly recommend to all!
