My Take on the Book
This is a great book with amazing recipes that kids and their parents can make together and then can sell for profit. The recipes themselves are very cool and you can make some items that will really stand out. I will say that there are a number of these recipes that do take a number of steps to create so they are not to be made without a parent helping in my opinion. Otherwise, this is a great book that will make you think outside the norm when it comes to your next lemonade stand.

My Take on the Book
What I loved about this book was how easy it was to follow and how delicious the outcome was for all of the items that we have tried thus far. The book is filled with great pictures which make it easy to see the end result. I also appreciated that most of the ingredients in the book were ones that I already had in the house (for the most part). The names of the recipes were memorable and there were some great twists on ones you may have made in the past that will make them instant favorites for the kids (at least that did in my house).

The author has a way of making cooking fun and you can tell that these recipes were included with the family in mind. Best of all, these are recipes that you can make with your kids. I had a blast with my own daughters whipping up some of the pancakes and while we may have made a mess, we had fun doing it and they tasted great! Great times and a great book!

In the spirit of the holidays, create and sample some tasty recipes featuring MIKE AND IKE® and HOT TAMALES® candies for your next holiday party.  Try these recipes created by Chef Jamie Geller as part of her recent alliance with the leading candy brands.


HOT TAMALES® Snickerdoodles
Servings: 2 dozen

INGREDIENTS:

·         1/2 cup (4 oz) HOT TAMALES®Fierce Cinnamon candies, coarsely chopped*
·         1/4 cup (2 oz) salted margarine, softened
·         1/4 cup (2 oz) shortening (I use Spectrum Organic)
·         3/4 cups (5.6 oz) granulated sugar
·         1 egg
·         1 1/2 cups (6.75 oz) all-purpose flour
·         1 teaspoon cream of tartar
·         1/2 teaspoon baking soda
·         pinch of salt (increase to 1/4 tsp if using unsalted margarine)
·         4 teaspoons granulated sugar
·         4 teaspoons ground cinnamon

*The best way to chop it is with a lightly oiled knife. 

INSTRUCTIONS:
1.       Line two cookie sheets with parchment paper and set aside.
2.       Using an electric mixer, cream together the margarine, shortening and ¾ cups sugar. Add the egg and beat until thoroughly combined.
3.       In a separate bowl, combine all dry ingredients. Add the dry ingredients (except the candy) into the creamed mixture and mix until just combined. Add the chopped candy and mix until the candy is evenly distributed, a few minutes more.
4.       Refrigerate the dough for at least 15 minutes (this makes it easier to handle).
5.       Preheat the oven to 375 degrees.
6.       Combine the remaining sugar and cinnamon in a small bowl.  Form dough into balls the size of small walnuts (I use a tablespoon cookie scoop). Roll the balls of cookie dough in the cinnamon sugar.
7.       Place the cookies two inches apart on the cookie sheets. Bake for 8 minutes, rotating the cookie sheets in the oven at the halfway point. They are done when they look puffed in the middle and slightly brown at the edges (the tops of the cookies will form cracks). Be careful not to overcook.
8.       Remove cookie sheet from the oven and let cookies sit on it for another minute or so before removing to cooling rack; cookies will flatten out as they cool.
9.       These cookies are best served warm, straight out of the oven, but they can be stored in an airtight container for up to two days.


MIKE AND IKE® Crispy Rice Cereal Treats
Servings: 8

INGREDIENTS:

·         1 ½ cups (13 oz) MIKE AND IKE® Original Fruits candies, coarsely chopped*
·         3 tablespoons (1.5 oz, 42g) margarine
·         10 oz (280 g) marshmallows
·         1/2 cup (1.7 oz, 48 g) marshmallow fluff
·         6 cups (5.7 oz, 160g) crisp rice cereal
*The best way to chop it is with a lightly oiled knife. 

INSTRUCTIONS:

1.       Grease a 9 X 13 pan and set aside.
2.       Combine the marshmallows and margarine in a large microwave safe bowl.
3.       Place the cereal and candy in another bowl and toss well to combine. Set aside.
4.       Microwave the marshmallows and margarine for one minute.
5.       Remove from the microwave and stir to combine. If the marshmallows are not fully melted return to the microwave and cook for 30 seconds at a time until they are fully melted.
6.       Stir in the fluff and mix well. Add the candy and cereal mixture and stir until combined.
7.       Turn the mixture out into the prepared pan. Let cool, then cut into squares.

My Take on the Book
We tend to seem to pack the same lunches day in and out and not only can I tell that this is a bit boring for the girls, I know it is a bit boring for me too. This book is a game changer! The book is completely filed from beginning to end with tips, strategies, recipes and more and I am VERY impressed with the breadth and depth of the book itself. The book capitalizes on the fact that the book if filled with healthy alternatives for lunch that can easily be put together to turn people's eyes around the lunch table at school. I even got some great ideas for my own lunch. I did not have all of the things that the book called for, but the stores around me definitely did! I am looking forward to using this more and more as the days go on and we get back into the school year.

Cheesy Buffalo Chicken Dip

Cheesy Buffalo Chicken Dip
FRANK’S® REDHOT® BUFFALO CHICKEN DIP

This robust creamy dip tastes like Buffalo Chicken Wings but without the mess! Serve hot with celery sticks, veggies or your favorite chips.

Prep Time: 5 min. Cook Time: 20 min.


  • 1 (8 oz.) package PHILADELPHIA Cream Cheese, softened
  • ½ cup Blue cheese or ranch salad dressing
  • ½ cup any flavor FRANK’S® REDHOT® Sauce
  • ½ cup Crumbled blue cheese or shredded mozzarella cheese
  • 2 cans (12.5 oz. each) - SWANSON® White Premium Chunk Chicken Breast in Water, drained



  1. HEAT oven to 350ºF. Place cream cheese into deep baking dish. Stir until smooth.
  2. MIX in salad dressing, Frank’s RedHot sauce and cheese. Stir in chicken.
  3. BAKE 20 minutes or until mixture is heated through; stir. Garnish as desired. Serve with crackers or cut up vegetables.


Makes 4 cups dip

Microwave Directions: Prepare as above. Place in microwave-safe dish. Microwave, uncovered, on HIGH 5 min. until hot, stirring halfway through cooking.

Tips: You may substitute 2 cups shredded cooked chicken.

Slow Cooker Method: Combine ingredients as directed above. Place mixture into small slow cooker. Heat on HIGH setting for 1 ½ hours until hot and bubbly or on LOW setting for 2 ½ to 3 hours. Stir.

Tailgating Tip: Prepare dip ahead and place in heavy disposable foil pan. Place pan on grill and heat dip until hot and bubbly.
FRANK’S® REDHOT® ORIGINAL BUFFALO CHICKEN WINGS

FRANK’S® REDHOT® ORIGINAL BUFFALO CHICKEN WINGS
Prep Time: 10 min. Cook Time: 20 min.


  • 2 ½ lbs. chicken wing pieces
  • ¾ cup any flavor FRANK’S® REDHOT® Wing Sauce



  1. BAKE wings in foil-lined pan at 500°F on lowest oven rack for 20 minutes until crispy, turning once.
  2. TOSS wings in sauce to coat.


Makes 6 to 8 servings

Tip: You may substitute ½ cup FRANK’S® REDHOT® Sauce mixed with 1/3 cup melted butter for the Wings Sauce. Alternate Cooking Directions: Deep-fry at 375°F for 10 minutes.
Broil 6-inches from heat 15 to 20 minutes, turning once.
Grill over medium heat 20 to 25 minutes, turning often.

CAJUN BUFFALO CHICKEN WINGS

CAJUN BUFFALO CHICKEN WINGS
Prep Time: 5 mins; Cook Time: 20 mins

2 ½ lbs. chicken wing pieces
½ cup any flavor FRANK’S® REDHOT® Buffalo Wings Sauce
1/3 cup ketchup
2tsp. Cajun seasoned spice blend

1. BAKE wings in foil-lined pan at 500 °F on lowest oven rack for 20 to 25 min. until crispy, turning once.
2. MIX Buffalo Wings Sauce, ketchup and spice blend.
3. TOSS wings in sauce to coat.

Makes 6 to 8 servings

Tip: You may substitute 1/2 cup FRANK’S® REDHOT® Sauce mixed with 1/3 cup melted butter for the Wings Sauce.

Alternate Cooking Directions: Deep-fry at 375°F for 10 min.
Broil 6-inches from heat 15 to 20 min., turning once.
Grill over medium heat 20 to 25 min., turning often.

HONEY BBQ SESAME WINGS

HONEY BBQ SESAME WINGS
These sweet honey sesame wings will delight your guests at any party.
Prep Time: 10 mins; Cook Time: 10 mins


  • ¼ cup honey barbecue sauce
  • ¼ cup FRANK’S® REDHOT® Cayenne Pepper Sauce
  • ¼ cup apricot jam
  • 1 Tbsp. Asian sesame oil
  • 2 ½ lbs. chicken wings, split and tips discarded
  • 2 Tbsp. toasted sesame seeds


  1. Combine barbecue sauce, Frank’s RedHot Sauce, jam and sesame oil; set aside.
  2. Deep fry* wings at 375°F (HIGH) for 10 min. or until cooked and crispy; drain.
  3. Toss hot wings in jam mixture. Place on serving platter and sprinkle with sesame seeds.


Makes 8 servings

*Alternate Cooking Directions: Bake 20 min. at 500°F until fully cooked and crispy, turning halfway; Broil 6-inches from heat 15 to 20 min., turning once; Grill over medium heat about 20 min., turning often.

SWEET CHILI ASIAN CHICKEN WINGS


SWEET CHILI ASIAN CHICKEN WINGS
Prep Time: 5 mins Cook Time: 20 mins


  • 3 lbs, chicken wing pieces
  • ¾ cup FRANK’S® RedHot Sweet Chili® Sauce
  • 2 tbsp. light soy sauce
  • 1 tsp. grated peeled ginger
  • 1 tsp. minced garlic
  • 2 Tbsp. minced green onion or cilantro



  1. BAKE wings in foil-lined pan at 500°F on lowest oven rack for 20 to 25 min. until crispy, turning once.
  2. MIX Sweet Chili Sauce, soy sauce, ginger and garlic in large bowl.
  3. TOSS wings in sauce to coat. Sprinkle with green onion or cilantro.


Makes 6 to 8 servings

Alternate Cooking Directions: Deep-fry at 375°F for 10 min.

Broil 6-inches from heat 15 to 20 min., turning once.

Grill over medium heat 20 to 25 min., turning often.

It’s time to whip up a batch of frosty treats, and make your summer the most scrumptious one yet!

Cheesecake Lollipops
Total time: 30 minutes plus chilling and freezing
Makes 30 lollipops
1 cup cold low-fat (1%) milk
1 package (11.1 oz.) no-bake cheesecake mix (without crust packet)
1 cup finely crushed chocolate wafers or chocolate sandwich cookies
1 package (12 oz.) chocolate chips
2 tsp. vegetable shortening
Garnishes: sprinkles, crushed nuts, and/or mini chocolate chips

1.       To large bowl, add milk and cheese-cake filling mix. With electric mixer on low speed, beat until combined. Increase speed to medium and beat about 3 minutes, or until thick. Stir in crushed cookies. Cover bowl and refrigerate at least 1 hour.
2.       Line baking sheet with parchment. With moistened hands, roll cheesecake mixture by tablespoonful into 30 balls and place on prepared baking sheet. Insert lollipop stick into each ball; freeze about 2 to 3 hours, or until firm.
3.       In small saucepan on low, melt chocolate chips and shortening stirring until smooth. Spread out garnishes on parchment.
4.       Remove pops from freezer. Carefully dip each pop into melted chocolate, turning to coat, then roll it in your choice of garnishes and return to baking sheet. Freeze at least 2, or until ready to serve.

 
Snickerdoodle Ice Cream Sandwiches
Total time: 35 minutes plus cooling and freezing
Makes 12 sandwiches
1 ½ cups all-purpose flour
1 tsp. cream of tartar
½ tsp. baking soda
¼ tsp. kosher salt
½ cup (1 stick) unsalted butter, at room temperature
½ cup plus 2 Tbsp. firmly packed light brown sugar
¼ cup granulated sugar
1 large egg
1 tsp. pure vanilla extract
¾ tsp. ground cinnamon
3 cups ice cream (any flavor)

1.       Preheat oven to 350°F. Line 2 baking sheets with parchment.
2.       In medium bowl, whisk together flour, cream of tartar, baking soda, and kosher salt. In large bowl with electric mixer, beat butter, brown sugar, and 2 tablespoons granulated sugar about 3 minutes, or until light and fluffy. Beat in egg and vanilla. Reduce speed to low and gradually add flour mixture, mixing just until incorporated.
3.       In small bowl, stir cinnamon and remaining 2 tablespoons granulated sugar. Form dough into 24 (1 ½ inch) balls, roll in cinnamon-sugar mixture, and place on prepared baking sheets, spacing them 2 inches apart. Bake 10 to 12 minutes, or until set and edges are slightly golden. Cool 5 minutes before transferring wire racks to cool completely.
4.       Sandwich ¼ cup ice cream between 2 cookies. Repeat to make 12 sandwiches serve immediately or freeze, covered, up to 3 days. 

Chocolate-Peanut Butter Bombe
Total time: 30 minutes plus freezing
Makes 16 Servings
2 pints chocolate-peanut butter ice cream
2 pints dulce de leche ice cream
8 fun-size peanut-chocolate candy bars (such as Snickers)
1 bottle (7.25 oz.) chocolate-and-peanut butter shell ice cream topping

1.       Coat 12-cup bowl with nonstick cooking spray; line with plastic wrap, extending wrap over sides by at least width of bowl.
2.       Cut carton off chocolate-peanut butter ice cream. Cut ice cream in ¾ –inch-thick rounds. Place slides in bowl to cover bottom and side to 1 inch from top, cutting slices to fit. With spatula, fill in gaps. Freeze 20 minutes or until firm. Meanwhile, refrigerate dulce de leche ice cream to soften slightly.
3.       Cut candy bars into ¼ -inch-thick slices (total 1 cup). Use potato masher or large spoon to stir dulce de leche ice cream to soften evenly; stir in candy. Spoon ice cream into bowl; spread level. Sprinkle crushed cookie crumbs over top; press into ice cream. Fold plastic wrap over ice cream to cover. Freeze bombe overnight or up to 2 weeks.
4.       Up to 1 day ahead; cut cardboard or paper plate to fit on crumbs. Invert bombe and cardboard together onto wire rack over rimmed baking sheet. Remove bowl and plastic wrap. Quickly smooth wrinkles. If ice cream starts to melt, refreeze before coating. Pour most of shell coating over bombe; use spatula to spread evenly. Transfer bombe to plate and drizzle with remaining shell coating. Freeze until serving.

Frozen Fruit Tart
Total time: 50 minutes plus cooling and freezing
Makes 8 servings
8 whole graham crackers
2 Tbsp. whole natural almonds
1 Tbsp. sugar
1 Tbsp. canola oil
1 Tbsp. honey
1 ½ cups light vanilla ice cream (such as slow- or double- churned)
1 ½ cups mango or passion fruit sorbet
3 ripe nectarines, each pitted and cut into 8 wedges
2 ripe plums, each pitted and cut into 8 wedges
1 cup raspberries

1.       Preheat oven to 350°F. In food processor with knife blade attached, pulse graham crackers until fine crumbs form. Add almonds and sugar; pulse until almonds are finely chopped. In cup, mix oil, honey and 2 teaspoons water; drizzle over crumb mixture. Pulse until crumbs are evenly moistened. Press crumb mixture onto bottom and up sides of 9-inch round tart pan with removable bottom.
2.       Bake tart shell crust 8 to 10 minutes, or until set and lightly browned at edges. Cool completely in pan on wire rack.
3.       Remove ice cream and sorbet from freezer; let stand at room temperature 10 minutes, or until slightly softened. Spoon ice cream and sorbet alternately into tart shell, pressing with back of spoon to smooth; cover and freeze at least 4 hours or overnight, or until firm.
4.       Carefully remove sides of pan and place tart on round platter. Arrange circle of nectarine wedges 1 inch from edge of tart then circle of plum wedges inside nectarines. Mound raspberries in center of tart. Serve immediately.

My Take on the Bookazine
This was a great publication that had so many recipes that not only look great, but I have tried two of the recipes and they were not only easy to make, but also they were delicious. I love bookazines like this that make meal-making so easy and make you look like an expert chef. I hope that Heart Publications continue to bring such great recipes together in the future too!

Lenten Fish Friday Wolfgang Puck Recipe

Chef Puck recently partnered with Campbell’s Soup Company to bring kitchens across America restaurant inspired signature sauces. Made with all-natural ingredients, varieties include Four Cheese, Arrabbiata, Creamy Vodka, and Tomato Basil. His fish dish, which was created at his LA restaurant Spago, uses Arrabbiata sauce to provide a much-needed spicy kick.

STRIPED BASS WITH WOLFGANG PUCK’S ARRABBIATA SAUCE “VERACRUZ STYLE” AND CLAMS CASINO

Yield: Serves 6

1 3-pound striped bass or snapper (scaled, cleaned and gutted)
1/2 cup extra virgin olive oil
1/2 tablespoon Kosher salt
1 cup yellow onion, sliced
10 ounces Spanish chorizo, sliced 1/8-inch thick
2 tablespoons garlic, minced
1/2 cup white wine
1 tablespoon capers, washed
1/2 cup Spanish olives, pitted
1 tablespoon oregano, chopped
1 tablespoon thyme, chopped
1 tablespoon Italian parsley, chopped
1 pound littleneck clams, scrubbed well
3 cups Wolfgang Puck’s Arrabbiata Sauce
1 lemon, cut into quarters


Preheat oven to 400 degrees F.

Put fish in a large colander and rinse under cold running water. Pat dry with paper towel and transfer to large non reactive baking dish. Rub fish with 2 tablespoons olive oil, and season generously with kosher salt.

In a large bowl, combine onion, chorizo, garlic, white wine, capers, olives, half of each chopped herb and Wolfgang Puck’s Arrabbiata Sauce. Arrange half of the mixture under the fish, lay fish on top, and arrange the remaining mixture on top.

Bake for 30 minutes, add clams and continue to bake for about 10 clams open and until juices run clear from fish.

Remove from the oven and let rest for 15 minutes. Serve directly out of baking dish or transfer to a platter by using 2 spoons loosening the head from the body of the fish, lift away and discard. Run 1 spoon along the spine of the fish, and gently break the flesh into 2 fillets. Lift the fillets onto a serving platter. Carefully check for bones and discard. Place remaining fish fillets on the platter, spoon over Wolfgang Puck’s Arrabbiata Sauce topping over fish, arrange clams and lemon wedges around fillets, sprinkle with remaining herbs.

Creamy Dijon Drumsticks, $1.69 per serving
1 ½ lb. small red potatoes, each cut in half (or quarters, if larger)
Salt and pepper
8 Medium chicken drumsticks (2 ¼ lb. total), skin removed
3 tbsp. plus ¼ cup Dijonnaise (creamy mustard)
2/3 cup panko (Japanese-style bread crumbs)
2 Medium celery sticks, thinly sliced

1) Preheat oven to 450◦ F. In 4-quart saucepan, place potatoes, enough water to cover, and ¼ teaspoon salt; heat to boiling on high. Reduce heat to medium-low; cover saucepan and simmer potatoes 10 to 12 minutes, or until just fork-tender.

2) Meanwhile, line 15” by 10” jelly-roll pan with nonstick foil. Brush chicken drumsticks with 3 tablespoons Dijonnaise and coat with panko, pressing to adhere. Place chicken on prepared pan and bake 25 minutes, or until crumbs are golden and juices run clear when thickest part of chicken is pierced with top of knife.

3) Drain potatoes well and place in medium bowl. Add celery, ¼ teaspoon freshly ground pepper, and remaining ¼ cup Dijonnaise; stir to coat vegetables. Makes 5 cups potato salad. Serve salad with chicken.


Baked Cavatelli with Sausage & Broccoli Rabe, $2.08 per serving
1 bunch broccoli rabe (about 1 lb.)
1 lb. cavatelli or orecchiette
¾ lb. hot Italian-sausage links, casings removed
2 tsp. olive oil
2 garlic cloves, thinly sliced
1/8 tsp. crushed red pepper flakes
1 pint grape or cherry tomatoes
2 Tbsp. cornstarch
1½ cups reduced-fat (2%) milk
1 can (8 oz.) tomato sauce or 1 cup tomato-basil sauce
4 oz. Fontina cheese, cut into ¼ inch cubes
¾ cup freshly grated Romano cheese


  1. Preheat oven to 400◦F. Heat large covered saucepot of salted water to boiling on high. Meanwhile, trim stems from broccoli rabe; discard. Coarsely chop remaining broccoli rabe; set aside.
  2. Add pasta to boiling water, and cook 2 minutes less than label directs. Drain pasta; return to saucepot.
  3. Meanwhile, in nonstick 12-inch skillet on medium-high, cook sausage 5 minutes, or until browned, breaking up sausage with side of spoon. Discard fat. Add oil, garlic, and crushed red pepper flakes. Reduce heat to medium; cook 2 minutes, or until garlic is golden.
  4. Stir in broccoli rabe; cover and cook 2 minutes, or until broccoli rabe begins to wilt, stirring. Add tomatoes and cook 5 minutes, or until tomatoes split.
  5. In 2-cup liquid measuring cup, whisk cornstarch into milk. Stir milk mixture into sausage mixture in skillet; heat to boiling, stirring frequently. Boil 1 minute to thicken slightly.
  6. Add sausage mixture, tomato sauce, Fontina, and ½ cup Romano to pasta in saucepot; toss to combine. Transfer pasta mixture to 8 individual 1 ½ -cup ramekins; sprinkle with remaining ¼ cup Romano. Place ramekins on large baking sheet or jelly-roll pan for easier handling. Bake 15 minutes, or until center is hot and top is golden.

My Take on the Bookazine
This was a great book of great recipes. In looking through the grouping of recipes I found so many recipes that sounded great and I was amazed to find that they all were $10 or less, which always helps when you are watching a budget! If you are looking for great recipes for a great price, look no further!
